I want to change the front seat / seats in my 79 bay, I fancy some VW like golf etc, are there any that fit really easy? what have others used?

if you can get hold of them rover sd1 seats are almost a straight bolt in & v. comfy too

any seats with a flat base / runners are a good bet then it's just a case of drilling holes and bolting in (a bit of strengthening would be advisable).
ideal candidates are most rover seats - mg metro turbo are good, or the best are porsche seats very comfy. you can pick up some porkers for around £50 for ok condition ones to £150 for minters.

i've seen some Range Rover Vogue leather ones put to good use....

i got 2002 punto sporting seats in mine easy fitted....
i've supplied Rover half leather, full leather,
Saab full leather, Volvo full leather.
all good seats and easy to fit.
some Saab and Volvo are heated
which is very nice ;)
