Cheese lovers HELP!!

I've got a nice bit of Stilton in me fridge and I'm just enjoying some wine and cheese for supper as ya do, but the Stilton is a wee bit out of date. How do I know if it's gone off?

didn't think cheese really went out of date? it's not like they actually keep it in a fridge while it's being cured/

cut the dry edges of it and get on with it.
