Hi Nathan, welcome to the site!
If you dont already have one, get a haynes manual for your beetle and read all the sections regarding the rear suspension setup, its important to get a feel for how it works as this will make the theory of lowering the rear suspension very clear and then it really is a case of removing a half a dozen bolts pulling and turning.
Its a bit more technical than that obviously, but i've not got time to do a full 'how to' guide right now.
A search on here or on google will give you some very good step by step guides, the theory and technique is the same for beetles, busses and type 3's, with some minor differences in components.
It is important that you know exactly what your doing and what to expect, its not at all beyond the realms of the diy mechanic, but if your not prepared there is the possibility of quite serious injury or to get it wrong and have to start again!
